Description
A moist and aromatic tea loaf featuring the deep sweetness of Medjool dates, the floral spice of cardamom, and the bright zing of fresh citrus, finished with crunchy walnuts.
Ingredients
1.5 cups all-purpose flour
1 teaspoon baking powder
0.5 teaspoon baking soda
1 teaspoon ground cardamom (freshly ground preferred)
0.5 teaspoon salt
0.5 cup unsalted butter, softened
0.75 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
Zest of 1 large orange
2 tablespoons fresh orange juice
1 cup Medjool dates, pitted and chopped
0.75 cup walnuts, roughly chopped
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan, or line it with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, ground cardamom, and salt until well combined.
Step 3: In a large mixing bowl, cream the softened butter and brown sugar together until the mixture is light and fluffy.
Step 4: Beat in the eggs one at a time, then stir in the vanilla extract, orange zest, and orange juice.
Step 5: Gradually add the dry flour mixture to the wet ingredients, stirring just until combined. Be careful not to over-mix.
Step 6: Gently fold in the chopped Medjool dates and the walnuts until evenly distributed throughout the batter.
Step 7: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Step 8: Bake for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Step 9: Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Step 10: Slice and serve the citrus cardamom date loaf with walnuts with butter or enjoy it plain.
Notes
For the best flavor, use Medjool dates and grind your cardamom fresh from pods.
