Description

A festive and easy-to-make dessert salad featuring a vibrant cranberry-pineapple Jello base and a luscious, tangy cream cheese topping, perfect for holiday gatherings.


Ingredients

2 (3 oz) packages Cranberry Jell-O
2 cups boiling water
1 (14 oz) can whole berry cranberry sauce
1 (20 oz) can crushed pineapple, well drained
1 (8 oz) package cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 (8 oz) tub whipped topping (like Cool Whip), thawed or 2 cups homemade whipped cream


Instructions

Step 1: In a large heatproof bowl, dissolve the Cranberry Jell-O in 2 cups of boiling water. Stir until completely dissolved, about 2 minutes.
Step 2: Stir in the whole berry cranberry sauce and the well-drained crushed pineapple into the Jell-O mixture. Mix until evenly combined.
Step 3: Pour the mixture into a 9x13 inch (or similar size) serving dish. Cover with plastic wrap and refrigerate for at least 4 hours, or until completely set and firm.
Step 4: While the Jell-O is chilling, prepare the topping. In a medium bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy.
Step 5: Gently fold in the thawed whipped topping (or homemade whipped cream) into the cream cheese mixture until light and fluffy. Do not overmix.
Step 6: Once the Jell-O layer is fully set, carefully spread the cream cheese topping evenly over the Jell-O. Cover and chill for at least 1 hour before serving to allow the topping to firm up slightly.

Notes

For best results, ensure your cream cheese is at room temperature for a smooth topping. To prevent the Jello from being watery, really press the liquid out of the crushed pineapple. This salad can be prepared a day in advance, making it a perfect holiday make-ahead dish!
