Description

A simple yet satisfying recipe for a classic egg sandwich featuring fluffy scrambled eggs and toasted bread.


Ingredients

2 large eggs
1 tbsp milk or cream (optional, for fluffier eggs)
1/2 tbsp butter or oil
2 slices of bread (white, wheat, or brioche work well)
Salt to taste
Black pepper to taste
Optional: 1 slice cheese (cheddar, American), favorite sauce, sliced tomato, avocado, cooked bacon


Instructions

Step 1: In a small bowl, whisk the eggs with milk or cream (if using), salt, and pepper until well combined. Do not overwhisk.
Step 2: Heat the butter or oil in a non-stick skillet over medium-low heat. Once melted, pour in the egg mixture.
Step 3: While the eggs are cooking, toast your bread to your desired crispness. If adding cheese, have it ready.
Step 4: As the edges of the eggs begin to set, gently push the cooked egg from the edges towards the center with a rubber spatula. Continue this, allowing uncooked egg to flow underneath, until the eggs are mostly set but still moist and fluffy. If adding cheese, place it on top of the eggs for the last 30 seconds of cooking to melt.
Step 5: Carefully slide the cooked eggs onto one slice of toasted bread. Add any desired optional toppings like tomato, avocado, or bacon.
Step 6: Top with the second slice of toasted bread, slice in half if preferred, and serve immediately.

Notes

For an extra layer of flavor, try toasting your bread in the same skillet after cooking the eggs to soak up any remaining butter or egg bits. Feel free to experiment with different cheeses and sauces!
