Ingredients
8 slices thick bread (brioche, challah, or Texas toast)
3 large eggs
1 cup whole milk
1 tablespoon granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
Pinch of salt
2 tablespoons unsalted butter, for cooking
Maple syrup, for serving
Fresh berries, for serving (optional)
Powdered sugar, for dusting (optional)
Instructions
Step 1: In a shallow dish or pie plate, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg (if using), and a pinch of salt until well combined and frothy.
Step 2: Heat 1 tablespoon of butter in a large non-stick skillet or griddle over medium heat until melted and shimmering.
Step 3: Dip one slice of bread into the egg mixture, allowing it to soak for about 10-15 seconds per side. Don't over-soak, or it will become soggy. For thicker breads, you might extend this a few seconds.
Step 4: Carefully transfer the soaked bread to the hot skillet. Cook for 2-3 minutes per side, or until golden brown and cooked through. Repeat with remaining bread slices, adding more butter as needed for each batch.
Step 5: Serve immediately with warm maple syrup, fresh berries, and a dusting of powdered sugar, if desired.
Notes
For the best French toast, use day-old bread as it absorbs the batter better without getting soggy. Adjust sugar and cinnamon to your taste. Keep cooked French toast warm in a 200°F (95°C) oven on a wire rack while you finish cooking the rest of the batch.
