Ingredients
2 cups cucumber, sliced
1 cup cherry tomatoes, halved
1/2 red onion, sliced
1/4 cup Kalamata olives
1/4 cup green olives
1/2 cup feta cheese, cubed
1 tbsp fresh parsley, chopped
1/4 tsp dried oregano
Salt & pepper, to taste
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
Instructions
Step 1: Prep the vegetables by slicing the cucumbers into half-moons, halving the cherry tomatoes, and thinly slicing the red onion.
Step 2: In a small jar or bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing.
Step 3: Place the cucumber, tomatoes, onion, and both types of olives into a large mixing bowl.
Step 4: Pour the dressing over the vegetables and toss gently until every piece is well-coated.
Step 5: Add the cubed feta cheese and fresh parsley, giving it one last gentle toss before serving.
Notes
Always use a high-quality extra virgin olive oil and block feta for the best results. Let the salad sit for 5 minutes before serving to allow the flavors to meld.
