Description
A tall, dense, and ultra-creamy New York style cheesecake with a buttery graham cracker crust.
Ingredients
1 1/2 cups graham cracker crumbs
6 Tbsp unsalted butter, melted
1 Tbsp granulated sugar
2 1/4 lb cream cheese, room temperature
1 1/4 cups granulated sugar
6 large eggs, room temperature
1/4 cup sour cream
1/2 Tbsp vanilla extract
Instructions
Step 1: Preheat oven to 325°F and wrap a 9-inch springform pan in several layers of foil.
Step 2: Mix graham crumbs, melted butter, and 1 Tbsp sugar; press into the bottom of the pan and bake for 8 minutes.
Step 3: Beat cream cheese and 1 1/4 cups sugar until smooth and fluffy.
Step 4: Add eggs one at a time on low speed, mixing just until combined.
Step 5: Fold in sour cream and vanilla extract.
Step 6: Pour batter onto crust, place in a roasting pan filled halfway with boiling water.
Step 7: Bake for 75-90 minutes until the center is jiggly but the edges are set.
Step 8: Turn off oven, crack door, and let cool for 1 hour before chilling in the fridge for 6+ hours.

Ensure all ingredients are at room temperature to prevent lumps and cracks.
