Description

Classic Old-Fashioned Potato Salad combines velvety potatoes, sweet dressing, and crunchy toppings for a creamy and dreamy side dish perfect for any occasion.


Ingredients

  • 2 lbs potatoes, peeled and cubed
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 1 tsp black pepper
  • 1/2 cup chopped celery
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives (toppings)
  • 1/4 cup crumbled bacon (toppings)
  • Fresh parsley (optional garnish)
  • Paprika (optional garnish)

Instructions

  1. Boil peeled and cubed potatoes in salted water until tender. Drain and let cool.
  2. In a bowl, combine mayonnaise, sour cream, mustard, apple cider vinegar, salt, and black pepper. Mix well.
  3. In a large bowl, combine cooled potatoes, chopped celery, red onion, and fresh parsley.
  4. Pour dressing over potato mixture and stir until well coated.
  5. Garnish with chopped fresh chives, crumbled bacon, fresh parsley, and paprika if desired. Serve immediately and enjoy!
