- 2 lbs potatoes, peeled and cubed
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp mustard
- 1 tbsp apple cider vinegar
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup chopped celery
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh chives (toppings)
- 1/4 cup crumbled bacon (toppings)
- Fresh parsley (optional garnish)
- Paprika (optional garnish)
Instructions
- Boil peeled and cubed potatoes in salted water until tender. Drain and let cool.
- In a bowl, combine mayonnaise, sour cream, mustard, apple cider vinegar, salt, and black pepper. Mix well.
- In a large bowl, combine cooled potatoes, chopped celery, red onion, and fresh parsley.
- Pour dressing over potato mixture and stir until well coated.
- Garnish with chopped fresh chives, crumbled bacon, fresh parsley, and paprika if desired. Serve immediately and enjoy!
