Ingredients
3 lbs sweet potatoes, peeled and cut into 1-inch chunks
1/2 cup (1 stick) unsalted butter, melted, plus 1/4 cup for streusel
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/4 cup whole milk or half-and-half
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Pinch of salt
For the Pecan Streusel Topping:
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 cup (1/2 stick) unsalted butter, melted
1 cup chopped pecans
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Step 2: Cook the sweet potatoes. You can either boil them in salted water until very tender (about 15-20 minutes) or roast them (tossed with a little olive oil) at 400°F (200°C) for 25-30 minutes until soft. Drain well if boiled.
Step 3: In a large bowl, mash the cooked sweet potatoes until smooth. You can use a potato masher, a hand mixer, or a food processor for a creamier consistency.
Step 4: Add the 1/2 cup melted butter, granulated sugar, 1/4 cup brown sugar, milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt to the mashed sweet potatoes. Mix until well combined and smooth.
Step 5: Pour the sweet potato mixture into the prepared baking dish and spread evenly.
Step 6: Prepare the Pecan Streusel Topping: In a medium bowl, combine the all-purpose flour, 1/2 cup packed light brown sugar, 1/4 cup melted butter, and chopped pecans. Mix with a fork until crumbly.
Step 7: Sprinkle the streusel topping evenly over the sweet potato mixture in the baking dish.
Step 8: Bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbly around the edges.
Step 9: Remove from oven and let it rest for 5-10 minutes before serving. Enjoy warm!
Notes
For extra richness, use half-and-half instead of milk. If you prefer a less sweet casserole, you can slightly reduce the sugar amount in the sweet potato base. This casserole reheats beautifully, making it excellent for leftovers.
