Description

If you’re searching for a dessert that feels like a slice of heaven, look no further than Cloud Cake. This ethereal dessert is incredibly light and fluffy, thanks to its unique blend of cream cheese, eggs, and a few simple ingredients. With a texture reminiscent of a cloud and a subtle sweetness, this cake is perfect for any occasion—be it a cozy afternoon tea, a family gathering, or a special celebration.

Ingredients

Scale
  • 200g (7 oz) cream cheese, softened
  • 50g (3 tbsp) unsalted butter, softened
  • 100ml (7 tbsp) milk
  • 4 large eggs, separated
  • 70g (⅓ cup) granulated sugar
  • 40g (⅓ cup) cake flour
  • 10g (1 tbsp) cornstarch
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 160°C (320°F). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a blender, combine the softened cream cheese, softened butter, milk, and vanilla extract. Blend until smooth and creamy.
  3. Add the egg yolks (reserve the egg whites) to the blender mixture, along with granulated sugar, cake flour, and cornstarch. Blend until fully combined and smooth.
  4. In a separate bowl, use a hand mixer to whip the egg whites until stiff peaks form.
  5. Gently fold the whipped egg whites into the cream cheese mixture in three additions. Be careful not to deflate the egg whites.
  6. Pour the batter into the prepared cake pan.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and serve your delightful Cloud Cake as is, or top with fresh fruit, whipped cream, or a dusting of powdered sugar.

Notes

This cake is perfect for any occasion and can be customized with toppings like fresh fruit or whipped cream. For a gluten-free option, substitute cake flour with a gluten-free blend.
