Description

A rich, irresistible dessert featuring a graham cracker crust, a creamy cream cheese layer, and a coconut topping, all baked to golden perfection.


Ingredients

1½ cups graham cracker crumbs
½ cup unsalted butter, melted
8 oz cream cheese, softened
½ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 (14 oz) can sweetened condensed milk
2 cups shredded sweetened coconut
1 cup semi-sweet chocolate chips


Instructions

Step 1: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Step 2: In a medium bowl, combine the graham cracker crumbs and melted unsalted butter. Press this mixture evenly into the bottom of the prepared baking pan.
Step 3: In a large bowl, using an electric mixer, beat the softened cream cheese and granulated sugar until smooth and creamy. Beat in the egg and vanilla extract until just combined.
Step 4: Pour the cream cheese mixture evenly over the graham cracker crust.
Step 5: Drizzle the sweetened condensed milk evenly over the cream cheese layer.
Step 6: Sprinkle the shredded sweetened coconut and then the semi-sweet chocolate chips evenly over the condensed milk layer.
Step 7: Bake for 25-30 minutes, or until the edges are lightly golden and the center is set. A toothpick inserted into the cream cheese layer should come out mostly clean.
Step 8: Remove from oven and let cool completely on a wire rack before cutting into bars. For best results, chill in the refrigerator for at least 2 hours before serving.

Notes

For a prettier presentation, you can lightly toast the shredded coconut before sprinkling it on top. To do this, spread it on a baking sheet and bake at 300°F (150°C) for 5-7 minutes, stirring occasionally, until golden.
