Ingredients
1 cup pure coconut water, chilled
1/4 cup pineapple juice
1 tablespoon fresh lime juice
1 teaspoon agave nectar or simple syrup
6-8 fresh mint leaves
Ice cubes or crushed ice
Lime wheels and extra mint for garnish
Instructions
Step 1: Place the fresh mint leaves and agave nectar in the bottom of a tall glass.
Step 2: Use a muddler to gently press the mint leaves to release their aromatic oils.
Step 3: Add the lime juice and pineapple juice to the glass and stir slightly.
Step 4: Fill the glass to the top with ice (crushed ice works best for this coconut water mocktail recipe).
Step 5: Pour the chilled coconut water over the ice.
Step 6: Stir gently with a long spoon to combine all the layers.

Notes
