Description
The famous Japanese steakhouse ginger dressing made with fresh onion, ginger, and celery.
Ingredients
1/2 cup peanut oil
1/2 cup chopped onion
1/4 cup rice wine vinegar
1/4 cup water
2 tablespoons fresh ginger (peeled, chopped)
2 tablespoons chopped celery
2 tablespoons soy sauce
1 tablespoon ketchup (or tomato paste)
2 teaspoons sugar
2 teaspoons lemon juice
1 pinch salt (to taste)
1 pinch pepper (to taste)
Instructions
Step 1: Combine all ingredients—peanut oil, onion, rice wine vinegar, water, ginger, celery, soy sauce, ketchup, sugar, lemon juice, salt, and pepper—in a high-speed blender.
Step 2: Blend on high speed for 45 to 60 seconds until all vegetables are completely liquefied into a pulpy dressing.
Step 3: Taste the dressing and add additional salt, pepper, or lemon juice if desired for balance.
Step 4: Pour the dressing into a glass jar or airtight container.
Step 5: Refrigerate for at least 30 minutes before serving to let the flavors meld together. Shake well before each use.
Notes
Always use fresh ginger for the best results. If you are allergic to peanuts, a neutral oil like canola or vegetable oil is an excellent substitute.
