Description

Crispy, seasoned potato cubes topped with warm nacho cheese and cool sour cream, just like the famous Taco Bell side dish.


Ingredients

Scale

1 lb bag of diced potatoes
3 tbsp canola oil
1 tbsp all-purpose flour
1 tbsp cornstarch
1 tbsp taco seasoning
0.5 tsp salt
0.5 cup nacho cheese sauce
0.25 cup sour cream


Instructions

Step 1: Dice potatoes into 1/2 inch cubes if using fresh russets, rinse, and pat dry.
Step 2: Toss the potatoes with 1 tablespoon of canola oil in a large bowl.
Step 3: Combine flour, cornstarch, taco seasoning, and salt; toss with potatoes until evenly coated.
Step 4: Heat remaining 2 tablespoons of oil in a skillet over medium-high heat and fry potatoes for 15-20 minutes until crispy and golden.
Step 5: Drain potatoes on paper towels and serve warm topped with nacho cheese and sour cream.

Notes

For extra spice, add a teaspoon of hot sauce to the cheese sauce. You can also use an air fryer at 400F for 18 minutes for a healthier version.
