Ingredients
16 oz Full-fat cottage cheese (4% milkfat)
1/4 cup Raw honey or maple syrup
1 tablespoon Vanilla bean paste or extract
Optional: 1/4 cup Dark chocolate chips
Optional: 1/4 cup Crushed nuts
Instructions
Step 1: Add the cottage cheese, sweetener, and vanilla to a high-speed blender or food processor.
Step 2: Blend on high for 1-2 minutes until the mixture is completely smooth and no curds remain.
Step 3: Taste the mixture and adjust sweetness if necessary.
Step 4: Fold in any desired mix-ins, such as chocolate chips or nuts, using a spatula.
Step 5: Pour the mixture into a freezer-safe glass container and smooth the top.
Step 6: Freeze for 3-4 hours. Stir every 30 minutes for the first 2 hours to ensure a creamy texture.
Step 7: Remove from the freezer 10-15 minutes before serving to allow it to soften slightly.
Notes
Always use full-fat cottage cheese for the best results. If the ice cream gets too hard in the freezer, let it thaw slightly before eating.
