Ingredients
1 cup full-fat cottage cheese (4% milkfat)
2 tablespoons maple syrup or honey
1 teaspoon pure vanilla extract
Optional: 1/4 cup fresh berries for topping
Optional: 1 tablespoon unsweetened cocoa powder for chocolate version
Instructions
Step 1: Place the cottage cheese, maple syrup, and vanilla extract into a high-speed blender or food processor.
Step 2: Blend the mixture on high for 60 to 90 seconds until it is completely smooth and no curds remain.
Step 3: If you are making the chocolate version, add the cocoa powder now and blend for another 20 seconds to incorporate.
Step 4: Pour the mousse into two individual serving bowls or ramekins.
Step 5: Refrigerate for at least 30 minutes to allow the mousse to set and achieve a firmer texture.
Step 6: Top with fresh berries or a sprinkle of cinnamon before serving.
