Ingredients
6 slices whole grain or sourdough bread, toasted
1 cup cottage cheese (about 2 tbsp per toast)
1 medium banana, sliced
1/2 teaspoon ground cinnamon
1/2 cup cucumber, sliced
1/2 cup cherry tomatoes, halved
1 cluster fresh cherry tomatoes on vine
1 tablespoon radish or arugula microgreens
3 ounces smoked salmon slices
1 teaspoon capers
1 teaspoon fresh dill
1/2 cup fresh blueberries
1/2 cup fresh raspberries
1 large soft-boiled egg, halved
1 teaspoon everything bagel seasoning or chili flakes
Instructions
Step 1: Toast the 6 slices of bread until they reach your desired level of crispness and golden-brown color.
Step 2: Spread exactly 2 tablespoons of cottage cheese onto each slice of the toasted bread.
Step 3: For the sweet toasts, top one slice with banana and cinnamon, and another with fresh blueberries and raspberries.
Step 4: For the savory and unique toasts, top the remaining slices with cucumber/tomato, banana/microgreens, smoked salmon/capers/dill, and the soft-boiled egg with seasoning.
Step 5: Arrange all toasts on a large serving board and serve immediately while the bread is still crisp.
Notes
Straining the cottage cheese for a few minutes can prevent the toast from getting soggy. Use a heavy sourdough for the best structural support.
