A bold, 30-minute meal featuring tender chicken and broccoli tossed in a zesty, herb-infused garlic butter sauce.
Ingredients
1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
1 tsp Cajun seasoning
1/2 tsp garlic powder
1/2 tsp smoked paprika
Salt and black pepper, to taste
2 tbsp olive oil
6 tbsp unsalted butter
4 cloves garlic, minced
1/2 tsp crushed red pepper flakes (optional)
1 tsp Dijon mustard
Juice and zest of 1 lemon
2 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
12 oz bowtie (farfalle) pasta
2 cups broccoli florets
1/2 cup reserved pasta water
1/2 cup grated Parmesan cheese
Instructions
Step 1: Boil the bowtie pasta in salted water; add broccoli during the last 3 minutes of cooking. Reserve 1/2 cup pasta water and drain.
Step 2: Season chicken with Cajun spice, garlic powder, paprika, salt, and pepper. Sear in olive oil over medium-high heat until cooked through. Remove and set aside.
Step 3: In the same skillet, melt butter and sauté minced garlic and red pepper flakes for 1 minute.
Step 4: Whisk in Dijon mustard, lemon juice, lemon zest, parsley, and chives to create the Cowboy Butter sauce.
Step 5: Return chicken, pasta, and broccoli to the skillet. Toss with pasta water and Parmesan cheese until creamy.
Step 6: Garnish with extra herbs and Parmesan before serving.
Notes
Ensure you reserve the pasta water, as it is the secret to making the butter sauce creamy rather than oily.
