Ingredients

2 cups cheese tortellini
1 pound boneless skinless chicken breasts cut into bite-sized pieces
1 tablespoon olive oil
1/2 cup unsalted butter
3 cloves garlic minced
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon red pepper flakes
1/2 cup fire-roasted red peppers sliced
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley chopped
1 tablespoon fresh chives chopped


Instructions

Step 1: Boil the cheese tortellini in a large pot of salted water according to package instructions; drain and set aside, reserving 1/2 cup of pasta water.
Step 2: Season the chicken pieces with salt and pepper, then sear in a large skillet with olive oil over medium-high heat until golden and cooked through (5-7 mins).
Step 3: Remove chicken from the skillet and lower heat to medium; add butter and garlic, cooking until the garlic is fragrant.
Step 4: Whisk in the Dijon mustard, lemon juice, red pepper flakes, and fire-roasted red peppers until a smooth sauce forms.
Step 5: Return the chicken and tortellini to the skillet, tossing well to coat in the cowboy butter sauce, adding pasta water if needed to loosen.
Step 6: Garnish with fresh parsley and chives before serving immediately.

Notes

Use fresh herbs for the best flavor. If you find the sauce too spicy, reduce the red pepper flakes by half.
