Description
A zesty and creamy appetizer log that combines the flavors of Texas caviar with the indulgence of jalapeño poppers.
Ingredients
16 oz cream cheese, softened
1 cup sharp cheddar cheese, shredded
1/2 cup canned black-eyed peas, rinsed and dried
1/2 cup canned sweet corn, rinsed and dried
2 large jalapeños, seeded and finely diced
1/4 cup red onion, finely diced
1/2 cup cooked bacon bits
1/2 cup pecans, finely chopped and toasted
1 tbsp lime juice
1/2 tsp garlic powder
Instructions
Step 1: In a large bowl, beat the softened cream cheese, garlic powder, and lime juice until smooth and creamy.
Step 2: Stir in the shredded cheddar cheese, diced jalapeños, red onion, corn, and black-eyed peas until evenly distributed.
Step 3: Lay a large piece of plastic wrap on a flat surface and transfer the cheese mixture to the center.
Step 4: Using the plastic wrap, mold the mixture into a log shape (about 8 inches long) and seal the ends tightly.
Step 5: Place the log in the refrigerator for at least 2 hours, or until it is firm enough to handle.
Step 6: On a shallow plate, mix the chopped pecans and bacon bits. Remove the plastic wrap and roll the log in the mixture until completely coated.
Step 7: Serve immediately or store in the fridge until ready to eat with crackers.
Notes
Ensure the beans and corn are fully dry to prevent the cheese log from becoming soggy.
