Ingredients

  • 1 lb ground beef
  • 1 lb beef smoked sausage, sliced ½ inch
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with juices
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) corn, drained
  • 1½ cups beef broth
  • 1 tsp chili powder
  • ½ tsp paprika
  • ½ tsp ground cumin
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat a large pot over medium heat and brown ground beef until no pink remains, about 6–8 minutes. Remove with slotted spoon and set aside.
  2. In the same pot, sauté sliced smoked sausage for 3–4 minutes until lightly browned. Remove and set aside with beef.
  3. Add diced onion and minced garlic to the pot; cook 2–3 minutes until softened and fragrant.
  4. Return beef and sausage to the pot. Add diced potatoes, pinto beans, diced tomatoes with juices, tomato sauce, corn, and beef broth. Stir to combine.
  5. Sprinkle chili powder, paprika, cumin, salt, and pepper over the stew; stir well.
  6. Bring mixture to a gentle boil, then reduce heat to low and simmer uncovered for 25–30 minutes, stirring occasionally, until potatoes are tender and stew thickens.
  7. Adjust seasoning as desired, adding more salt, pepper, or hot sauce.
  8. Ladle into bowls and serve with crusty bread, cornbread, or your favorite sides.

Notes

For thicker stew, simmer longer or mash some potatoes. Add jalapeños for heat or deglaze pot with beer or wine for extra depth. This recipe adapts well to slow cooker or freezer storage.
