Description

A comforting and deeply flavorful cozy ramen chicken bowl featuring tender seared chicken, jammy soft-boiled eggs, and a rich ginger-infused broth.


Ingredients

2 packs of fresh or dried ramen noodles
2 boneless skinless chicken thighs, sliced
1 tablespoon vegetable oil
4 cups high-quality chicken broth
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons soy sauce
1 tablespoon mirin
1 teaspoon toasted sesame oil
2 large eggs
1 cup fresh baby spinach or bok choy
2 green onions, sliced
Optional: Chili oil or sesame seeds for garnish


Instructions

Step 1: Soft-boil the eggs by placing them in boiling water for 6.5 minutes, then immediately transferring them to an ice bath. Peel and set aside for your cozy ramen chicken bowl.
Step 2: Heat vegetable oil in a large pot over medium-high heat. Add sliced chicken and sear until golden brown and cooked through. Remove chicken and set aside.
Step 3: In the same pot, add minced garlic and grated ginger. Sauté for 1 minute until fragrant, being careful not to burn them.
Step 4: Pour in the chicken broth, soy sauce, and mirin. Bring to a gentle boil, then reduce heat and simmer for 10 minutes to develop the cozy ramen chicken bowl flavors.
Step 5: While the broth simmers, cook the ramen noodles in a separate pot of boiling water according to package directions. Drain and divide between two bowls.
Step 6: Stir the sesame oil and greens into the hot broth until the greens are wilted. Pour the broth over the noodles, top with the seared chicken, halved eggs, and green onions.

Notes

Always cook noodles separately to prevent them from soaking up too much broth and becoming mushy.
