Description
A rich, creamy, and incredibly addictive chicken dish featuring ranch seasoning, bacon, and plenty of melted cheese.
Ingredients
2 lbs boneless skinless chicken breasts
2 (8 oz) blocks cream cheese, softened
1 packet (1 oz) Ranch seasoning mix
1 cup sharp cheddar cheese, shredded
8 slices bacon, cooked and crumbled
1/4 cup green onions, sliced (for garnish)
Optional: 1/4 cup chicken broth (for consistency)
Instructions
Step 1: Place the chicken breasts in the bottom of a slow cooker in a single layer.
Step 2: Sprinkle the dry ranch seasoning mix evenly over the chicken breasts.
Step 3: Place the blocks of softened cream cheese on top of the seasoned chicken.
Step 4: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until chicken is very tender.
Step 5: Using two forks, shred the chicken directly in the slow cooker and mix with the melted cream cheese.
Step 6: Stir in the shredded cheddar cheese and half of the crumbled bacon until the cheese is completely melted.
Step 7: If the mixture is too thick, stir in a small amount of chicken broth until the desired consistency is reached.
Step 8: Top with the remaining bacon and sliced green onions before serving.
Notes
For a lower-fat version, use light cream cheese, though the texture will be slightly less rich. Always shred the cheese yourself for the smoothest melt.
