Description
A rich, custard-based bread pudding featuring the bright flavors of orange zest and tart cranberries, made with buttery challah bread.
Ingredients
8 cups challah or brioche bread, cut into 1-inch cubes (about 1 lb)
1.5 cups fresh or frozen cranberries
1 tablespoon orange zest
1/2 cup fresh orange juice
4 large eggs
2 cups whole milk
1 cup heavy cream
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 tablespoons melted butter (for the pan)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with melted butter.
Step 2: Place the bread cubes in a large mixing bowl and toss with the fresh cranberries and orange zest until evenly distributed.
Step 3: In a separate medium bowl, whisk together the eggs, sugar, milk, heavy cream, orange juice, vanilla extract, cinnamon, and salt until well combined.
Step 4: Pour the custard mixture over the bread cubes. Use a large spoon or spatula to gently press the bread down so every piece is submerged.
Step 5: Let the mixture sit for 20-30 minutes at room temperature to allow the bread to fully absorb the liquid.
Step 6: Transfer the mixture to the prepared baking dish and spread it out evenly.
Step 7: Bake for 45-50 minutes, or until the top is golden brown and the custard is set but still slightly wobbly in the center.
Step 8: Remove from the oven and let cool for at least 10 minutes before serving warm.
Notes
Using stale bread is key; if your bread is fresh, toast the cubes in the oven at 300°F for 10 minutes before starting.
