A festive and crunchy holiday appetizer featuring crisp celery stalks filled with a creamy, nutty, and tart cranberry mixture.
Ingredients
6 large stalks of fresh celery
8 oz cream cheese, softened
1/2 cup dried cranberries, finely chopped
1/2 cup pecans, toasted and finely chopped
1 tbsp honey (optional)
1/4 tsp sea salt
Fresh chives for garnish
Instructions
Step 1: Wash and thoroughly dry the celery stalks, then cut them into 3-inch long pieces.
Step 2: In a bowl, beat the softened cream cheese until fluffy and smooth.
Step 3: Fold in the chopped cranberries, most of the pecans, and the honey and salt until well combined.
Step 4: Pipe or spoon the mixture into the celery hollows and top with remaining pecan bits.
Step 5: Garnish with chives and chill for 30 minutes before serving your Cranberry Pecan Cream Cheese Stuffed Celery “Snow Logs".
Notes
For the best presentation, use a star-tipped piping bag to create a decorative ridged look for the cream cheese filling.
