Ingredients
1 (15-count) package frozen mini phyllo shells, thawed
8 ounces brie cheese, rind trimmed and cut into 24 small pieces
1/2 cup dried cranberries
1/2 cup chopped walnuts
2 tablespoons honey
1 teaspoon fresh lemon juice
Optional: fresh thyme sprigs for garnish
Instructions
Step 1: Preheat your oven to 350°F (175°C). Arrange the thawed mini phyllo shells on a baking sheet, ready for filling.
Step 2: Cut the brie cheese into small, approximately 1/2-inch cubes. You should aim for about 24 pieces, enough for one piece per phyllo cup.
Step 3: Place one piece of brie into each phyllo cup. Distribute the dried cranberries and chopped walnuts evenly among the cups, placing them on top of and around the brie.
Step 4: Bake for 10-12 minutes, or until the brie is visibly melted and bubbly, and the edges of the phyllo cups are golden brown and crisp.
Step 5: While the phyllo cups are baking, prepare the honey drizzle. In a small bowl, whisk together the honey and fresh lemon juice until well combined.
Step 6: Carefully remove the baked phyllo cups from the oven. Immediately drizzle the honey-lemon mixture over each cup. If desired, garnish with a tiny sprig of fresh thyme or a sprinkle of lemon zest for an extra touch of elegance.
