Description

This ultimate weeknight comfort food combines tender chicken, crispy bacon, and a creamy, cheesy ranch sauce all baked to perfection.


Ingredients

4 cups cooked chicken, shredded
8 slices bacon, cooked until crispy and crumbled
8 oz cream cheese, softened
1/2 cup sour cream
1/2 cup milk
1 packet (1 oz) ranch seasoning mix
12 oz short pasta (like penne or elbow macaroni), cooked and drained
2 cups shredded sharp cheddar cheese, divided
2 tablespoons fresh green onions, chopped (for garnish)


Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large bowl, whisk together the softened cream cheese, sour cream, milk, and ranch seasoning mix until smooth and well combined.
Step 3: Add the shredded cooked chicken, crumbled crispy bacon (reserving a small amount for garnish if desired), cooked pasta, and 1½ cups of the shredded cheddar cheese to the sauce mixture. Stir gently until all ingredients are evenly coated.
Step 4: Transfer the chicken and pasta mixture into the prepared baking dish, spreading it out evenly.
Step 5: Sprinkle the remaining ½ cup of shredded cheddar cheese over the top of the casserole. If you reserved some, sprinkle the extra crumbled bacon on top as well.
Step 6: Bake for 20-25 minutes, or until the casserole is bubbly around the edges and the cheese on top is melted and golden brown.
Step 7: Remove from the oven and let stand for 5 minutes before serving. Garnish with chopped green onions, if desired.

Notes

For an extra layer of flavor, consider using smoked cheddar cheese. This casserole is also great for meal prepping; simply store leftovers in an airtight container in the refrigerator for up to 3 days.
