Description

A deliciously easy and creamy corn casserole, featuring sweet corn and tangy cream cheese, perfect as a comforting side dish for any meal.


Ingredients

2 (15-ounce) cans whole kernel corn, drained
1 (15-ounce) can creamed corn
8 ounces cream cheese, softened
1/2 cup (1 stick) unsalted butter, melted
1/2 cup sour cream
1 tablespoon granulated sugar (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese (optional, for topping)
1 cup crushed butter crackers (like Ritz, optional, for topping)


Instructions

Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large mixing bowl, combine the drained whole kernel corn, creamed corn, softened cream cheese, melted butter, sour cream, optional granulated sugar, salt, and black pepper. Stir until all ingredients are well combined and smooth.
Step 3: Pour the corn mixture evenly into the prepared baking dish.
Step 4: If desired, sprinkle the shredded cheddar cheese evenly over the top of the corn mixture. For an extra crunch, combine the crushed butter crackers with a tablespoon of melted butter and sprinkle over the cheese layer.
Step 5: Bake for 30-35 minutes, or until the casserole is bubbly around the edges and the topping is golden brown.
Step 6: Remove from the oven and let it rest for 5-10 minutes before serving. This allows the casserole to set slightly.

Notes

For a spicier kick, add a diced jalapeño to the corn mixture. This casserole is also fantastic with crispy bacon bits mixed in or sprinkled on top.
