Description
A high-protein, vibrant dip that combines the creaminess of blended cottage cheese with the richness of ripe avocados.
Ingredients
2 large ripe avocados, pitted and peeled
1 cup cottage cheese (low fat or full fat)
2 tablespoons fresh lime juice
1/4 cup fresh cilantro, chopped
1 clove garlic, minced
1/2 teaspoon sea salt
Optional: 1/2 jalapeño, seeded and minced
Instructions
Step 1: Place the scooped avocado flesh and cottage cheese into a food processor or high-speed blender.
Step 2: Add the lime juice, cilantro, minced garlic, salt, and jalapeño if using.
Step 3: Blend on high for 30-60 seconds until the mixture is completely smooth and no cottage cheese curds are visible.
Step 4: Taste and adjust salt or lime juice to your preference.
Step 5: Serve immediately in a chilled bowl with your favorite dippers.
Notes
To keep the dip from browning, press plastic wrap directly onto the surface before storing in the fridge.
