Description

A delightful pasta salad combining the classic flavors of a BLT sandwich with tender elbow macaroni in a creamy, zesty dressing, perfect for any gathering.


Ingredients

1 pound elbow macaroni
1/2 pound bacon, cooked crispy and crumbled
2 cups cherry tomatoes, halved
4 cups chopped romaine or iceberg lettuce
1/2 cup finely diced red onion (optional)
1 1/2 cups mayonnaise
1/4 cup sour cream or plain Greek yogurt
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon granulated sugar
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste


Instructions

Step 1: Cook the elbow macaroni according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process. Set aside to cool completely.
Step 2: While the pasta cooks and cools, cook the bacon in a skillet over medium heat until crispy. Drain on paper towels, then crumble once cool. Halve the cherry tomatoes and chop the lettuce and red onion (if using).
Step 3: In a large bowl, whisk together the mayonnaise, sour cream (or Greek yogurt), apple cider vinegar, Dijon mustard, sugar, salt, and black pepper until smooth and well combined.
Step 4: Add the cooled macaroni, crumbled bacon, halved cherry tomatoes, and diced red onion (if using) to the dressing. Stir gently to ensure all ingredients are evenly coated.
Step 5: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, chill for 2-3 hours.
Step 6: Just before serving, gently fold in the chopped lettuce. Taste and adjust seasonings if necessary. Serve cold.

Notes

For an extra smoky flavor, consider adding a pinch of smoked paprika to the dressing. If you prefer a milder onion flavor, soak the diced red onion in cold water for 10 minutes before adding to the salad.
