Description
A luxurious, restaurant-quality pasta dish featuring a velvety parmesan cream sauce, tender seared chicken, and fresh broccoli.
Ingredients
2 boneless skinless chicken breasts
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
250g fettuccine pasta
2 cups fresh broccoli florets
2 tablespoons unsalted butter
3 cloves garlic, minced
1.5 cups heavy cream
1 cup freshly grated parmesan cheese
2 tablespoons fresh parsley, chopped
Instructions
Step 1: Cook the fettuccine in a large pot of boiling salted water. Add the broccoli during the last 3 minutes of boiling. Drain and reserve some pasta water.
Step 2: Season chicken with salt and pepper. Heat olive oil in a skillet and cook chicken until golden and done (about 165°F). Set aside and slice.
Step 3: In the same pan, melt butter and sauté garlic for 1 minute.
Step 4: Stir in heavy cream and simmer for 3-5 minutes until slightly thickened.
Step 5: Reduce heat to low and whisk in parmesan cheese until the sauce is silky and smooth.
Step 6: Toss the pasta, broccoli, and chicken into the sauce. Adjust consistency with reserved pasta water if needed.
Step 7: Serve hot garnished with fresh parsley.
Notes
Always grate your own parmesan for a smooth, melt-in-your-mouth sauce.
