Creamy Chicken Noodle Casserole

Description

A heartwarming and easy-to-make casserole featuring tender chicken, egg noodles, and a rich, creamy sauce, baked to golden perfection.


Ingredients

12 ounces wide egg noodles
2 tablespoons unsalted butter
1/2 cup chopped yellow onion
1/2 cup chopped celery
2 cloves garlic, minced
2 cups shredded cooked chicken (rotisserie chicken works great)
1 (10.5 ounce) can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1 cup frozen peas and carrots blend
1 teaspoon dried parsley
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and black pepper to taste
1 1/2 cups shredded sharp cheddar cheese, divided
1/2 cup crushed butter crackers (like Ritz) or breadcrumbs, for topping (optional)


Instructions

Step 1: Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: Cook egg noodles according to package directions until al dente. Drain well and set aside.
Step 3: While noodles cook, melt butter in a large skillet or Dutch oven over medium heat. Add onion and celery; cook until softened, about 5-7 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
Step 4: Remove skillet from heat. Stir in shredded chicken, cream of chicken soup, milk, sour cream, frozen peas and carrots, parsley, garlic powder, onion powder, salt, and pepper. Mix until well combined.
Step 5: Add the cooked and drained egg noodles to the skillet with the chicken mixture. Stir gently until the noodles are evenly coated. Fold in 1 cup of shredded cheddar cheese.
Step 6: Transfer the mixture to the prepared baking dish. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top. If desired, sprinkle with crushed crackers or breadcrumbs.
Step 7: Bake for 25-30 minutes, or until bubbly and the topping is golden brown. Let stand for 5-10 minutes before serving.

Notes

For an extra boost of flavor, sauté some fresh mushrooms with the onion and celery. You can also swap out cheddar for a blend of Colby Jack or Gruyere cheese. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
