Creamy Chipotle Chicken Pasta

Description

A rich, smoky, and slightly spicy pasta dish featuring tender chicken, a velvet chipotle cream sauce, and perfectly cooked penne.


Ingredients

1 lb boneless skinless chicken breasts, sliced into strips
12 oz penne pasta
2 tablespoons olive oil
1 small onion, finely diced
3 cloves garlic, minced
2 chipotle peppers in adobo sauce, minced
2 tablespoons adobo sauce (from the can)
1.5 cups heavy cream
1/2 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh cilantro for garnish
Lime wedges for serving


Instructions

Step 1: Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
Step 2: While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Season the chicken strips with salt and pepper, then add them to the skillet.
Step 3: Cook the chicken for 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.
Step 4: In the same skillet, add the diced onion. Sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.
Step 5: Stir in the minced chipotle peppers and the adobo sauce. Pour in the heavy cream and bring to a gentle simmer.
Step 6: Reduce heat to low and stir in the Parmesan cheese until melted and the sauce has thickened slightly.
Step 7: Add the cooked pasta and chicken back into the skillet. Toss everything together until the pasta is well coated. If the sauce is too thick, add a splash of the reserved pasta water.
Step 8: Garnish with fresh cilantro and serve immediately with lime wedges on the side.

Notes

Adjust the number of chipotle peppers to control the heat level. One pepper is mild, two is medium, and three is spicy.
