Ingredients
3 oz package Jell-O (any flavor, strawberry recommended)
15 oz can crushed pineapple, drained
16 oz container cottage cheese
8 oz container Cool Whip, thawed
Instructions
Step 1: In a large mixing bowl, combine the cottage cheese, drained crushed pineapple, and the Jell-O powder.
Step 2: Stir the mixture thoroughly until all ingredients are completely mixed and the Jell-O powder is evenly distributed. Ensure there are no dry pockets of Jell-O.
Step 3: Gently fold in the thawed Cool Whip until no streaks remain and the mixture is light and airy. Be careful not to overmix, which can deflate the whipped topping.
Step 4: Transfer the salad mixture to a serving bowl or an attractive mold. Smooth the top with a spatula.
Step 5: Cover the bowl or mold with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the Jell-O to set and the flavors to meld completely.
Step 6: Serve chilled as a refreshing side dish or a light, sweet dessert. Garnish with a mint sprig, fresh pineapple, or a maraschino cherry if desired.
Notes
For a firmer salad, you can reduce the amount of Cool Whip slightly or add an additional 0.5 oz of Jell-O powder. For extra texture, try adding miniature marshmallows or shredded coconut when folding in the Cool Whip.
