Description
A classic, refreshing summer side dish featuring thinly sliced cucumbers tossed in a tangy sour cream and fresh dill dressing.
Ingredients
2 large English cucumbers, thinly sliced
1/2 red onion, thinly sliced
1/2 cup sour cream
2 tablespoons white vinegar
1 tablespoon fresh dill, chopped
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Step 1: Slice the cucumbers and onions thinly using a knife or mandoline.
Step 2: Place the cucumber slices in a colander and sprinkle with salt. Let them sit for 30 minutes to drain excess moisture, then pat dry with paper towels.
Step 3: In a medium bowl, whisk together the sour cream, vinegar, sugar, fresh dill, and black pepper.
Step 4: Add the cucumbers and onions to the dressing and toss gently to coat every slice evenly.
Step 5: Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together perfectly.
Notes
For the best results, use fresh dill rather than dried. If the salad is too thick after chilling, stir in a teaspoon of milk or water to loosen the dressing.
