A velvety and rich one-pot pasta side dish that combines the aromatic power of garlic with the savory depth of Parmesan cheese.
Ingredients
2½ cups low sodium chicken broth
1½ cups dry orzo pasta
2 cloves garlic, finely minced
¾ teaspoon salt
¼ teaspoon black pepper
½ cup heavy cream
¼ cup shredded Parmesan cheese
2 tablespoons fresh parsley
Instructions
Step 1: In a medium saucepan, combine the chicken broth, dry orzo, minced garlic, salt, and pepper.
Step 2: Bring the mixture to a boil over medium-high heat, then immediately reduce the heat to medium-low.
Step 3: Cover the pan and simmer for 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed.
Step 4: Remove the lid and stir in the heavy cream and shredded Parmesan cheese.
Step 5: Cook for another 1-2 minutes while stirring constantly until the sauce is thick and creamy.
Step 6: Stir in the fresh parsley and serve hot.
Notes
If the orzo becomes too thick upon standing, stir in a splash of warm milk or broth before serving to loosen the sauce.
