Ingredients
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups whole milk
2 cups sharp cheddar cheese, freshly grated
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Pinch of cayenne pepper (optional, for a subtle kick)
Instructions
Step 1: Melt the butter in a medium saucepan over medium heat. Once melted, add the all-purpose flour and whisk constantly for 1-2 minutes to create a smooth roux. It should be light golden in color.
Step 2: Slowly pour in the cold milk, whisking continuously to prevent any lumps from forming. Continue to whisk as the mixture heats up and thickens, bringing it to a gentle simmer. This should take about 3-5 minutes.
Step 3: Reduce the heat to low. Add the freshly grated cheddar cheese a handful at a time, whisking until each addition is fully melted and incorporated before adding more. This ensures a smooth, creamy sauce.
Step 4: Once all the cheese is melted and the sauce is smooth, stir in the salt, black pepper, and optional cayenne pepper. Taste and adjust seasonings as needed.
