A rich and spicy one-pan chicken dish featuring a velvety jalapeno and cream cheese sauce. Perfect for quick weeknight dinners and low-carb lifestyles.
Ingredients
1.5 lbs chicken breasts, thinly sliced
2 large jalapenos, seeded and diced
4 oz cream cheese, softened
1/2 cup heavy cream
1/4 cup chicken broth
1/2 cup grated parmesan cheese
3 cloves garlic, minced
1/2 small onion, finely diced
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp onion powder
Instructions
Step 1: Season the chicken breast slices with salt, pepper, and onion powder on both sides.
Step 2: Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5-7 minutes per side until golden brown and cooked through. Remove and set aside.
Step 3: In the same skillet, add the diced onions and jalapenos. Sauté for 3-4 minutes until softened.
Step 4: Add the minced garlic and cook for 30 seconds. Deglaze the pan with chicken broth, scraping the bottom with a spatula.
Step 5: Reduce heat to medium-low. Stir in the cream cheese until melted, then slowly add the heavy cream and parmesan cheese, whisking until a smooth sauce forms.
Step 6: Place the cooked chicken back into the skillet. Simmer for 2-3 minutes until the sauce has thickened and the chicken is heated through. Serve immediately.
Notes
For a milder version, remove all seeds and ribs from the jalapenos. For extra spice, leave some seeds in or add a dash of cayenne pepper.
