Description

A classic, ultra-creamy, and tangy macaroni salad filled with crunchy vegetables, perfect for any summer BBQ.


Ingredients

1 lb elbow macaroni
1.5 cups mayonnaise
1/2 cup sour cream
2 tablespoons apple cider vinegar
1 tablespoon yellow mustard
2 tablespoons granulated sugar
1 cup celery, finely diced
1/2 cup red onion, finely diced
1 cup red bell pepper, diced
1/2 cup carrots, shredded
1/2 teaspoon paprika
Salt and pepper to taste


Instructions

Step 1: Boil the elbow macaroni in salted water until al dente, then drain and rinse under cold water.
Step 2: In a small bowl, whisk the mayo, sour cream, vinegar, mustard, and sugar until smooth.
Step 3: Place the cooled pasta, celery, onion, bell pepper, and carrots in a large bowl.
Step 4: Pour the dressing over the vegetables and pasta, tossing to coat thoroughly.
Step 5: Season with salt, pepper, and paprika.
Step 6: Chill for at least 4 hours before serving.
