Creamy Ranch Chicken & Noodles

Description

A quick and comforting dish featuring tender chicken, egg noodles, and a rich, savory ranch-flavored cream sauce.


Ingredients

1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
1 (1 oz) packet ranch dressing mix, divided
1 tbsp olive oil
8 oz egg noodles
8 oz cream cheese, softened
1/2 cup sour cream
1 cup chicken broth
1/2 tsp garlic powder
1/4 tsp onion powder
1 cup shredded cheddar or mozzarella cheese
Optional: Fresh parsley, chopped, for garnish


Instructions

Step 1: Season the chicken. Pat chicken dry with paper towels. In a medium bowl, toss the chicken cubes with half of the ranch dressing mix until evenly coated.
Step 2: Cook the chicken. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Remove chicken from skillet and set aside.
Step 3: Prepare the noodles. While the chicken cooks, bring a large pot of salted water to a rolling boil. Add egg noodles and cook according to package directions until al dente. Drain well and set aside.
Step 4: Make the creamy ranch sauce. In the same skillet (no need to clean), reduce heat to medium. Add the softened cream cheese, sour cream, chicken broth, garlic powder, onion powder, and the remaining half of the ranch dressing mix. Whisk constantly until the cream cheese is melted and the sauce is smooth and creamy. Bring to a gentle simmer, stirring constantly, for 1-2 minutes.
Step 5: Combine ingredients. Return the cooked chicken to the skillet with the sauce. Add the drained egg noodles and shredded cheese. Stir gently until everything is well combined and the cheese is melted and bubbly, coating all the chicken and noodles.
Step 6: Serve and enjoy. Serve hot, garnished with fresh parsley if desired. This dish is best enjoyed immediately.

Notes

For an even quicker meal, use leftover cooked chicken or rotisserie chicken. Simply shred and add with the noodles in Step 5. You can also add a cup of frozen peas or chopped bell peppers along with the chicken in Step 5 for added vegetables.
