Description
A luxurious, Persian-inspired frozen treat featuring fragrant rose water and crunchy roasted pistachios in a rich custard base.
Ingredients
2 cups heavy whipping cream
1 cup whole milk
3/4 cup granulated sugar
5 large egg yolks
1.5 tablespoons food-grade rose water
1/2 cup roasted unsalted pistachios, chopped
1/4 teaspoon sea salt
Instructions
Step 1: Heat the milk, half the sugar, and salt in a saucepan until steaming.
Step 2: Whisk egg yolks with the remaining sugar until pale and thick.
Step 3: Temper the eggs by slowly adding hot milk to the yolk mixture while whisking.
Step 4: Return the mixture to the pan and cook until it coats the back of a spoon.
Step 5: Strain the custard, stir in heavy cream and rose water, then chill overnight.
Step 6: Churn the chilled base in an ice cream maker, adding pistachios in the last 5 minutes.
Step 7: Transfer to a container and freeze for 6 hours until firm.
Notes
Ensure rose water is specifically labeled 'food grade' and not for cosmetic use.
