Description
Tender chicken breasts are seasoned and seared to perfection, then smothered in a rich, creamy sauce infused with Dijon mustard, thyme, and paprika. Served over fluffy rice, this dish offers a comforting and hearty meal that's perfect for chilly evenings.
Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup cooked white rice (or brown rice for a healthier option)
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream, Dijon mustard, dried thyme, and paprika. Allow the sauce to simmer for 2-3 minutes until it thickens slightly.
- Return the chicken to the skillet, spooning the creamy sauce over the top. Let it simmer for an additional 2-3 minutes to heat through.
- Serve the chicken over a bed of cooked rice, drizzling more sauce on top if desired. Garnish with fresh parsley and serve with lemon wedges.
Notes
For added nutrition, stir in steamed broccoli or sautéed spinach. To introduce a spicy kick, add a pinch of cayenne pepper or red pepper flakes to the sauce. For a dairy-free version, substitute heavy cream with coconut milk. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a skillet over medium heat, adding a splash of chicken broth or water to loosen the sauce as needed.
