Instructions

  1. Season the chicken breasts with salt, pepper, garlic powder, and onion powder on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream, Dijon mustard, dried thyme, and paprika. Allow the sauce to simmer for 2-3 minutes until it thickens slightly.
  4. Return the chicken to the skillet, spooning the creamy sauce over the top. Let it simmer for an additional 2-3 minutes to heat through.
  5. Serve the chicken over a bed of cooked rice, drizzling more sauce on top if desired. Garnish with fresh parsley and serve with lemon wedges.
