Ingredients
1 ½ cups fresh or frozen strawberries, hulled
¼ cup granulated sugar (for sauce)
1 tablespoon lemon juice
1 tablespoon cornstarch mixed with 1 tablespoon water
1 ½ cups graham cracker crumbs

24 ounces (3 blocks) cream cheese, softened

Instructions
Step 1: Preheat oven to 325°F and prepare the strawberry sauce by simmering strawberries, sugar, and lemon juice, blending, and thickening with cornstarch slurry.
Step 2: Mix graham cracker crumbs, sugar, and melted butter; press into a 9-inch springform pan and bake for 10 minutes.
Step 3: Beat softened cream cheese and sugar until creamy, then add eggs one at a time followed by vanilla, sour cream, and heavy cream.
Step 4: Layer half the filling, dollop sauce, add remaining filling, and swirl with a knife to create a marble effect.
Step 5: Bake for 60 minutes or until edges are set, then cool in the oven with the door cracked before chilling for 6+ hours.
