A quick and delicious weeknight meal featuring al dente spaghetti tossed in a rich, creamy sauce with tangy sun-dried tomatoes and fresh spinach.
Ingredients
8 oz spaghetti or your favorite long pasta
2 tbsp olive oil (or oil from sun-dried tomatoes)
1/2 cup oil-packed sun-dried tomatoes, drained and thinly sliced
3-4 cloves garlic, minced
1/2 tsp red pepper flakes (or to taste)
1 cup heavy cream
1/2 cup reserved pasta water
1/2 cup grated Parmesan cheese, plus more for serving
4-5 oz fresh spinach
Salt and freshly ground black pepper to taste
Instructions
Step 1: Cook the spaghetti according to package directions in a large pot of salted boiling water until al dente. Before draining, reserve about 1 cup of the starchy pasta water. Drain the spaghetti and set aside.
Step 2: While the pasta cooks, heat the olive oil (or sun-dried tomato oil) in a large skillet or pot over medium heat. Add the sliced sun-dried tomatoes, minced garlic, and red pepper flakes. Sauté for 2-3 minutes until fragrant, being careful not to burn the garlic.
Step 3: Pour in the heavy cream and 1/2 cup of the reserved pasta water. Bring the sauce to a gentle simmer, stirring occasionally. Let it simmer for 3-5 minutes, allowing it to thicken slightly. Stir in 1/2 cup of grated Parmesan cheese until melted and smooth.
Step 4: Add the fresh spinach to the sauce and cook for 1-2 minutes, or until the spinach has wilted. Add the cooked and drained spaghetti to the skillet. Toss everything together until the pasta is evenly coated with the creamy sauce. If the sauce seems too thick, add another splash of reserved pasta water.
Step 5: Taste and season with salt and freshly ground black pepper as needed. Serve immediately, garnished with extra Parmesan cheese if desired.
Notes
For an extra burst of flavor, you can add some fresh basil or parsley at the end. If you prefer a richer flavor, consider adding a tablespoon of butter to the sauce with the cream.
