  • ¾ cup heavy cream
  • ½ cup chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a rolling boil. Cook chicken ravioli 4–5 minutes until al dente. Reserve ¼ cup pasta water, then drain ravioli and keep warm.
  2. While ravioli cooks, heat olive oil in a large skillet over medium heat. Sauté diced shallot 1–2 minutes until translucent.
  3. Add minced garlic; cook 30 seconds until fragrant without browning.
  4. Stir in sun-dried tomatoes and red pepper flakes (if using); toast 1 minute, stirring constantly.
  5. Pour in heavy cream and chicken broth; scrape pan to deglaze. Simmer 2–3 minutes until slightly thickened.
  6. Lower heat; whisk in Parmesan cheese gradually until sauce is smooth and glossy. Season with salt, pepper, and extra red pepper flakes to taste.
  7. Add cooked ravioli and reserved pasta water to skillet; gently toss to coat ravioli evenly in sauce.
  8. Stir in fresh basil; let rest 30 seconds to wilt basil without losing color.
  9. Divide ravioli among plates; spoon remaining sauce over top. Garnish with extra basil and Parmesan curls if desired.

Notes

Prep sun-dried tomatoes, shallots, and garlic up to a day ahead. Reheat leftovers gently with added broth or pasta water to restore creaminess.
