Description
A silky, zesty, and mildly spicy green salsa that blends roasted tomatillos with buttery avocados.
Ingredients
1 lb fresh tomatillos, husked and rinsed
2 jalapeños, stems removed
2 large ripe avocados, pitted and peeled
1/2 cup fresh cilantro
2 garlic cloves
2 tbsp lime juice
1 tsp kosher salt
Instructions
Step 1: Broil the tomatillos and jalapeños on a baking sheet until charred and softened, about 5-8 minutes.
Step 2: Allow the roasted vegetables to cool slightly to avoid steam pressure in the blender.
Step 3: Combine roasted tomatillos, jalapeños, avocados, cilantro, garlic, lime juice, and salt in a blender.
Step 4: Blend on high speed until the mixture is completely smooth and creamy.
Step 5: Adjust the consistency with a splash of water if necessary and season with additional salt to taste.
Notes
Store with plastic wrap touching the surface to prevent the avocado from browning.
