Description

A luxurious one-pan Mediterranean meal featuring tender seared chicken, sun-dried tomatoes, and spinach in a creamy Parmesan orzo sauce.


Ingredients

2 large boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 tablespoons olive oil
3 cloves garlic, minced
1 cup orzo pasta
1/2 cup sun-dried tomatoes, chopped
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach, chopped
1/2 teaspoon red pepper flakes
1 tablespoon butter


Instructions

Step 1: Season the chicken breasts evenly with salt, pepper, garlic powder, and Italian seasoning.
Step 2: Heat olive oil in a large skillet over medium-high heat and sear the chicken until golden and cooked through, then set aside.
Step 3: In the same pan, melt butter and sauté minced garlic for 1 minute until fragrant.
Step 4: Add dry orzo and chopped sun-dried tomatoes, toasting for 2 minutes while stirring.
Step 5: Stir in chicken broth and heavy cream, bringing to a boil then reducing to a simmer.
Step 6: Cover and cook for 10-12 minutes until the orzo is tender and the liquid has thickened.
Step 7: Mix in Parmesan cheese, chopped spinach, and red pepper flakes until the spinach wilts.
Step 8: Slice the chicken, return it to the skillet to warm through, and serve your Creamy Tuscan Chicken Orzo immediately.

Notes

To lighten the dish, use half-and-half instead of heavy cream. For a gluten-free version, use a certified gluten-free orzo.
