Ingredients
2 cups full-fat cottage cheese
2 tablespoons thick coconut cream
1 teaspoon pure vanilla extract
1 tablespoon maple syrup or honey
2 tablespoons toasted shredded coconut (for garnish)
Optional: fresh berries or mango
Instructions
Step 1: For a smooth consistency, place the cottage cheese and coconut cream into a high-speed blender.
Step 2: Add the vanilla extract and your preferred sweetener to the blender.
Step 3: Blend on high for 30-60 seconds until the curds disappear and the mixture is perfectly smooth.
Step 4: Pour the mixture into two serving bowls.
Step 5: Chill in the refrigerator for at least 15 minutes to firm up.
Step 6: Top with toasted coconut and fresh fruit before serving.
Notes
Use cold ingredients for the best texture. If using as a dip, reduce the sweetener slightly.
