Description
A decadent, one-pot white lasagna in soup form featuring Italian sausage, a three-cheese blend, and fresh spinach.
Ingredients
1 lb Italian sausage
1 onion, chopped
3 cloves garlic, minced
6 cups chicken broth
1 (15 oz) can of white beans, drained and rinsed
1 cup heavy cream
2 cups spinach, chopped
1 1/2 cups ricotta cheese
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
8 oz lasagna noodles, broken into pieces
Salt and pepper to taste
Instructions
Step 1: In a large pot, brown the Italian sausage over medium-high heat until fully cooked; drain excess grease if necessary.
Step 2: Add the chopped onion and sauté for 4-5 minutes until soft, then stir in the minced garlic for another minute.
Step 3: Pour in the chicken broth and add the broken lasagna noodles; simmer for 10-12 minutes until noodles are tender.
Step 4: Stir in the white beans and heavy cream, allowing the soup to return to a gentle simmer.
Step 5: Add the chopped spinach and stir until wilted (about 1-2 minutes).
Step 6: Remove from heat, stir in mozzarella and Parmesan, then serve topped with a dollop of ricotta cheese.
Notes
Use hot Italian sausage for an extra kick of flavor. If reheating, add a bit of broth as the noodles absorb liquid over time.
