Description

1 head of cauliflower, cut into bite-sized florets
½ cup all-purpose flour
½ cup water
1 tsp garlic powder
½ tsp salt
¼ tsp black pepper
2 tbsp melted butter (or vegan substitute)
⅔ cup buffalo sauce


Instructions

Step 1: Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper.
Step 2: In a large mixing bowl, whisk together the all-purpose flour, water, garlic powder, salt, and black pepper until a smooth, thin batter forms.
Step 3: Add the cauliflower florets to the bowl and toss gently, ensuring each piece is lightly and evenly coated with the batter.
Step 4: Arrange the battered cauliflower florets in a single layer on the prepared baking sheet, ensuring they are not touching.
Step 5: Roast for 15 minutes, flipping the florets halfway through to promote even browning and crisping.
Step 6: While the cauliflower bakes, combine the melted butter (or substitute) and buffalo sauce in a small bowl. Whisk until well combined.
Step 7: After the first bake, remove the cauliflower from the oven. Transfer the par-baked florets into the bowl with the buffalo sauce mixture and toss until all pieces are thoroughly coated.
Step 8: Return the sauced cauliflower to the baking sheet, spreading them again in a single layer. Bake for an additional 25-30 minutes, flipping once, until the cauliflower is tender, golden, and crispy.
Step 9: Remove from the oven and let cool for 5-10 minutes before serving. This cooling time enhances the crispness.

Notes

For an extra kick, add a pinch of cayenne pepper to the batter. If you prefer a milder flavor, reduce the amount of buffalo sauce or mix it with a bit of honey. These also work great in an air fryer at 400°F (200°C) for 15-20 minutes, flipping halfway.
