Description

Experience the best of both worlds with tender, Ritz-crusted chicken baked to crispy perfection and served with a rich, aromatic butter chicken sauce.


Ingredients

2 boneless, skinless chicken breasts, halved horizontally (4 cutlets)
1 sleeve Ritz crackers (approx. 34 crackers), finely crushed
1/2 cup all-purpose flour
2 large eggs, beaten
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1 (15-ounce) jar butter chicken sauce (or homemade)
1/4 cup heavy cream, optional
Fresh cilantro, chopped, for garnish


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Pat the chicken cutlets dry with paper towels.
Step 3: Set up three shallow dishes: one with crushed Ritz crackers, Parmesan, garlic powder, paprika, black pepper, and salt; one with flour; and one with beaten eggs.
Step 4: Dredge each chicken cutlet first in flour (shaking off excess), then dip in beaten egg, and finally press into the cracker mixture to coat thoroughly.
Step 5: Place breaded chicken on the prepared baking sheet and drizzle melted butter over each piece.
Step 6: Bake for 20-25 minutes, or until chicken is cooked through (internal temp 165°F/74°C) and the crust is golden and crispy.
Step 7: While chicken bakes, gently heat the butter chicken sauce in a saucepan. Stir in heavy cream if desired.
Step 8: Serve crispy chicken cutlets immediately with warm butter chicken sauce, garnished with fresh cilantro.

Notes

For an even crispier crust, consider air frying the chicken at 375°F (190°C) for 12-15 minutes, flipping halfway. Homemade butter chicken sauce can be used for a deeper flavor profile.
